1/2 cup Limoncello
2 jiggers vodka or coconut rum (optional)
14 oz. coconut water
1 lb shaved ice or enough to fill 2 12 oz glasses
1 fresh lemon, for garnish

Squeeze a small thin slice of lemon into each glass. Leave slice in glass.

Fill 2 chilled 12 oz glasses with shaved ice.

Pour chilled coconut water over ice. Add Limoncello and a splash of vodka or coconut rum (if using). Garnish with a twist of lemon. Serve with a straw or a spoon.

Variation: Add a tablespoon of cream or lemon yogurt. More fresh lemon juice may be added. Sweeten, if desired, with honey or agave syrup.
