LOW CAL SPINACH QUICHE 
1 (10 oz.) pkg. frozen chopped spinach
1/2 lb. Swiss cheese, diced
2 tbsp. flour
3 eggs, beaten
1 c. skim or 2% milk
1/2 tsp. salt
Dash pepper
Dash nutmeg
Vegetable Spray for 9 inch pie pan

Cook spinach according to directions. Omitting salt. Drain and cool. Combine Swiss cheese and flour. Set aside, combine eggs, milk, salt, pepper and nutmeg. Stir in spinach and cheese. Pour mixture into 9 inch spray coated pie plate. Bake at 350 degrees for 55-60 minutes. Let stand 5-10 minutes before serving. Makes 8 servings. Can add mushrooms, ham and whatever if desired.
