PINEAPPLE CHEESE-CAKE PIE 
1 (9-inch) pie shell
12 oz. creamed cottage cheese
1/2 c. sugar
2 eggs
6 tbsp. milk
1/4 tsp. salt
2 tbsp. flour
1/2 tsp. vanilla
2 tbsp. lemon juice

PINEAPPLE GLAZE:

3 tbsp. sugar
1 tbsp. cornstarch
1 (8 oz.) can crushed pineapple

Prebake pie shell until almost done. Using blender, blend together cottage cheese, sugar, salt, milk, and lemon juice until smooth. Add eggs, flour, and vanilla. Blend until smooth. Pour into pie shell. Bake in preheated 350 degree oven for 40 minutes or until set. Top with pineapple glaze and chill.

PINEAPPLE GLAZE: Mix together in small pot the sugar and cornstarch. Add pineapple and mix. Cook until thickened or cook in microwave on high 2 minutes, stir, and cook 1 1/2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
