LEMON MELTAWAYS 
2 1/4 c. buttermilk baking mix
1 1/4 c. confectioners' sugar
1/4 c. butter
3/4 c. flaked coconut
6 lg. eggs
1/2 c. lemon juice
2 tbsp. grated lemon peel
2 1/4 c. granulated sugar

Preheat oven to 350 degrees. Grease 15 1/2" x 10 1/2" x 1" pan. Combine 2 cups buttermilk baking mix and 1/4 cup confectioners' sugar. Cut in butter until crumbly. Press into pan. Bake until light brown, about 15 minutes.

Combine remaining baking mix, granulated sugar, coconut, eggs, 6 tablespoons lemon juice and grated lemon peel. Pour over baked layer. Bake until set, about 25 minutes. Loosen edges from pan while warm.

Blend remaining confectioners' sugar with remaining lemon juice. Spread glaze over warm filling. When cool, cut into 2"x1" bars. Store in air tight containers; separate by wax paper.
