TABOOLI 
1 big bunch parsley
1/4 head lettuce
1 sm. onion, shredded
1 tomato
1/4 cucumber
1/4 green pepper
6 radishes, shredded
1/2 c. cracked wheat (bulghar)
2 to 4 tbsp. oil
2 to 4 tbsp. lemon juice
Salt
Pepper
Crushed or chopped mint

Use any or all - onion, tomato, cucumber, green pepper, and radishes - optional.

Soak wheat in tepid water, approximately 1/2 hour until wheat is soft. Chop clean, drained parsley medium to fine. Chop any or all optional vegetables into small pieces. Mix and add wheat. Add remaining ingredients, 1 at a time. Toss. Serve immediately or chill up to 1/2 hour.
