ZUCCHINI-CHILE-CASSEROLE 
2 1/2 c. zucchini, diced or chopped
1/4 to 1/2 c. chopped, peeled chile
1 egg
1 c. grated cheese
Additional grated cheese
1/2 med. onion
1 tbsp. butter or oil
3/4-1 c. milk
Salt, if desired

Saute onion in oil or butter. Add chile. Add zucchini and saute until zucchini s barely done (translucent). Transfer to baking dish. Add egg beaten in milk. Stir in cup of grated cheese. Bake about 30 minutes until bubbling all over and firm. Sprinkle top of casserole with additional grated cheese about 15 minutes before casserole is done.
