SPINACH SOUFFLE 
2 boxes of frozen chopped spinach
6 oz. cream cheese
8 oz. shredded Mozzarella cheese
Med. onion, chopped
butter

Cook spinach according to package directions and drain. Saute onions in butter until translucent. Mix all ingredients together well. Place in a souffle dish or casserole. Bake at 350 degrees for 30 minutes.
