OATMEAL CRISPIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking powder
3 c. quick cooking oatmeal
1/2 c. chopped nuts

Thoroughly cream shortening and sugars; add eggs and vanilla; beat well. Add sifted dry ingredients. Add oatmeal and nuts; mix well. Shape in rolls; wrap in waxed paper or plastic wrap; chill thoroughly. Slice 1/4 inch thick; bake on an ungreased cookie sheet at 350 degrees for 10 minutes. Makes 5 dozen cookies.

This cookie dough will keep, rolled and wrapped, in the refrigerator for several weeks. You can bake them fresh at a moment's notice and you don't even have to grease the cookie sheet! For more colorful cookies, roll in colored sugar before slicing or sprinkle the colored sugar on the slices.
