PEPPER STEAK 
2 to 2 1/2 lb. London Broil or round steak
2 tbsp. oil
2 med. onions, minced
1 clove garlic, minced
1 tsp. salt
1 tsp. pepper
2 green peppers, cut in strips
1 c. drained canned tomatoes or 4 fresh skinned, sliced tomatoes

Combine and add last to steak mix, stirring constantly; 1 tablespoon cornstarch, 2 teaspoon soy sauce, 1/4 cup water. Slice meat in strips. Heat oil in heavy skillet. Saute onion and garlic. Add meat strips a few at a time to brown. Season with salt and pepper. Add green pepper. Cover and simmer 30 minutes. Add tomatoes, simmer 10 minutes. Add cornstarch mix last. May be made in advance and reheated. Serves 6 to 8.
