LEMON GARLIC COG 
1 lb. fresh cod fillets
1/3 c. olive oil
1/4 c. water
1/2 c. chopped parsley
3 tbsp. lemon juice
1 - 1 1/2 cloves garlic, pressed
1 lg. tomato, diced
1/2 - 3/4 c. bread crumbs
8 very thin slices fresh lemon

Cut the fillets into 4 equal pieces. Evenly spread 1 tablespoon of oil in the bottom of a shallow baking dish. Place fillets in the dish, leaving room between each fillet. Mix remaining oil with water, parsley, lemon juice, garlic and pepper. Sprinkle diced tomato over each fillet and pour 2/3 of the oil- spice mixture over the tomatoes. Sprinkle with bread crumbs and pour the remaining oil mixture over the bread crumbs. Top with lemon slices. Bake at 350 degrees for 25 minutes. fish should flake when it is ready. Serves 4.

This recipe was just ok. Maybe add some course sea salt to give it a little more flavor. Also, 2/3 cup olive oil was too much. Cut it back to maybe 1/3 cup and you probably wouldn't notice any difference.
