4 (8 inch) flour tortillas Salad oil 1 sm. onion 1 tsp. chili powder 1 lb. ground beef or 2 (5 oz.) cans of chunk chicken, drained or cooked chicken of your own 1 (4 oz.) can chopped chilies, drain 1/3 c. mild or hot taco sauce Lettuce Sour cream About 35 minutes before serving, steam tortillas as directed on package. In 12 inch skillet over medium heat, heat 1 tablespoon oil. Cook onions until tender. Stir in chili powder, cook 1 minute. Cook meat, add to onion mixture. Then add chili and taco sauce. Remove from heat. Spoon 1/4 of mixture into center of steamed tortillas. Fold left side over right, right side over left. Then fold both ends over to form a package. Fasten with toothpicks. Wipe skillet clean. In same skillet over medium heat, heat 1/4 inch of oil to 375 degrees and deep fry folded side down, 2 minutes then turn and fry other side. Drain on paper towels. Remove toothpicks. Serve with lettuce and sour cream or melted cheese. |
