BLACKBERRY MUFFINS | |
1 egg 1/2 c. milk 1/4 c. cooking oil 1 1/2 c. flour 1/2 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1 c. fresh chopped blackberries or 3/4 c. well- drained canned blackberries Beat egg slightly with fork. Stir in milk and oil. Sift together and add flour, sugar, baking powder, and salt. Blend in blackberries carefully. Bake at 400 degrees for 20-25 minutes. Makes 12 medium muffins. |
