LO - CAL WHITE BREAD 
1 pkg. dry yeast
2 1/4 c. water
2 tbsp. sugar
1 heaping tbsp. shortening (I use Crisco)
2 level tsp. salt
About 6 to 7 c. flour

Soften yeast in real warm water. Add sugar, salt and shortening, melted. Add flour a small amount at a time and stir in. When firm enough to handle put on floured board and knead until it is smooth and satiny adding flour until not sticky (10 to 20 minutes).

Put in greased bowl and let rise in warm place until double in size. Punch down and divide into loaves. Put in greased loaf pans - use solid shortening and let rise until almost double in size. Bake in 400 degree oven for 15 minutes then turn down to 350 degrees and bake 15 minutes more. Take out of oven and grease top of loaf with butter. Makes 2 loaves.

VARIATION: BROWN BREAD - Replace 2 cups white flour with 2 cups whole wheat flour first, then finish with white flour.
