BREAD AND BUTTER PICKLES 
4 lbs. sm. cucumbers, cut into 1/4 inch thick slices
3 sliced onions
3 c. vinegar
3 c. firmly packed brown sugar
2 tbsp. mustard seed
1 1/2 tsp. celery seed
1 tsp. cinnamon
1 tsp. turmeric
1/2 tsp. ground ginger
1 pod hot red pepper
1 tsp. prepared horseradish
2 red peppers, seeded and coarsely chopped
2 green peppers, seeded and coarsely chopped

In large bowl, mix cukes with onion sand 1/2 cup salt. Let stand 4 hours. Drain.

In large stainless steel lined saucepan, combine vinegar, 1 cup water, the sugar and the seasonings. Bring to a boil and simmer for 3 minutes. Add cukes, onions and peppers, simmer for 10-120 minutes. Spoon into clean pint jars; seal according to jar manufacturer's directions.
