MEXICAN BLACK-EYED PEAS 
1 (16 oz.) pkg. dried peas
1 lb. Bryan leaner cut sausage
1/4 c. onion
2 tbsp. sugar
2 1/2 tbsp. chili powder
2 tbsp. garlic salt
1/4 tsp. black pepper
1 lg. can whole tomatoes
1 1/2 c. water

Soak peas overnight. Bring peas to a boil. Brown sausage and saute onion. In large saucepan combine peas, sausage, onion, sugar, chili powder, garlic salt, pepper, tomatoes and water. Bring to a good boil. Simmer for 1 1/2 hours or until peas are tender. DELICIOUS!
