PIZZA COOKIE | |
2 sticks (1 c.) butter 1/2 c. peanut butter 1 c. brown sugar, packed 1/2 c. white sugar 2 eggs 2 c. flour 1 tsp. baking soda 1 1/2 c. oatmeal 1/2 c. walnuts 6 oz. chocolate chips 1/2 c. raisins, optional 1/2 c. coconut flakes, optional Cream softened butter, peanut butter and sugars until smooth. Add eggs and mix. Add flour and baking soda. Stir. Next add oatmeal and chocolate chips. Add walnuts and raisins (optional). Grease 1 pizza pan (14 1/2 inch across or 1 large cookie sheet). Preheat oven to 375 degrees. Pat dough in greased pizza pan. Bake 10 minutes. Remove from oven and sprinkle coconut (optional) on top of dough patting down with back of spoon. Continue baking for another 15 minutes. |
