BATTER FOR SHRIMP OR FISH 
4 eggs
3 tbsp. cornstarch
3 tbsp. plain flour
1/4 tsp. salt (or to taste)
1/2 tsp. baking powder

Lightly mix eggs, cornstarch, flour, salt, and baking powder in a bowl. The batter will be lumpy. Dip clean shrimp or fish into batter and fry in medium high-heated oil at 375 degrees. This is a good batter for fresh fried vegetables or for making sweet and sour pork.
