SHRIMP STIR-FRY 
1 tbsp. oil
4 garlic cloves, diced
2 lg. red peppers, cut julienne
1 lg. onion, thin sliced
3 c. (1 lb.) broccoli, cut into bite-size pieces and steamed
2 tbsp. toasted pine nuts
1 tbsp. raisins
12 oz. med. shrimp, cooked, shelled, deveined
Salt and pepper

Heat oil in wok or pan over medium heat. Add garlic and cook. Remove garlic and set aside. Increase heat, add red pepper slices and onions. Fry until softened. Mix in broccoli, nuts and raisins and heat 2 minutes. Return garlic with shrimp and stir fry until just heated through. Season. Serve with rice or angel hair pasta. Only 300 calories. Serves 2.
