ZUCCHINI MOZZARELLA SPEARS 
3 sm. zucchini (about 6 oz. each)
1 tbsp. oil
1/2 tsp. salt
1/2 tsp. basil
2 oz. Mozzarella cheese, shredded (1/2 c.)

Cut each zucchini lengthwise into quarters. In a 2 quart oblong baking dish, sprinkle oil, salt and basil over zucchini. Sprinkle Mozzarella on top. Cover with plastic wrap (leave a corner open). Cook in microwave on High for 5 1/2 to 6 1/2 minutes, until tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
