ITALIAN FRIED PEPPERS 
4 lg. green bell peppers
2 tbsp. olive oil
1 clove garlic, minced
1 tsp. oregano
Salt to taste
2 tbsp. butter
1/8 tsp. pepper

Remove stem, seed and pith from peppers, cut lengthwise into strips about 1 1/2 inches wide. Heat olive oil and butter in a frying pan. Add pepper and garlic. Cook over medium heat until slightly browned, stirring occasionally. Sprinkle with pepper and oregano. Cover and cook over low heat for 15 minutes or just until limp and tender. Salt to taste. Serve while hot. Makes 4-5 servings.
