LEMONY CHICKEN 
6 half chicken breasts, skinned, boned & pounded
Salt
2-3 well beaten eggs
1 c. fine bread crumbs
4 tbsp. butter
1-1 1/2 c. sliced fresh mushrooms
6-8 strips muenster cheese
1 c. chicken broth
1 lemon

Season boned chicken pieces with salt. Immerse in eggs several hours or overnight. Remove from eggs. Roll in crumbs. Brown quickly but lightly in skillet with butter. Place chicken pieces in large shallow baking dish, single layer. Cover with sliced mushrooms and top with cheese slices. Bake for 30 minutes, basting every 5-10 minutes with chicken broth. Just before serving squeeze lemon juice over chicken. Delicate flavor and tender chicken. Enjoy! Serves 4-6.
