BAKED PUMPKIN 
Wash pumpkin. Cut off top and scoop out seeds and stringy parts of pumpkin. Place in casserole lined with foil so that it comes up sides of pumpkin. Bake with lid on for 40 minutes at 350 degrees.

FILLING:

1/2 c. brown sugar
3/4 tsp. cinnamon
1/2-1 tsp. vanilla
2 eggs
1/2 tsp. ginger
Nuts & raisins (opt.)
Enough milk or light cream to fill pumpkin cavity

Mix all ingredients, fill partially baked pumpkin. Add a few bits of butter on top. Replace lid, bake 1 1/2 hours at 350 degrees. Serve by scooping out some of baked pumpkin with filling. Serve warm topped with ice cream.

Turned out great. Took some to work with me my work associates loved it and asked for the recipe. Some of them even stated that this recipe would be a good one for when their grand kids came over.
