JOLLOF RICE 
1 c. rice (boil for 4 min. and rinse)
1 lg. tomato (red), chopped
1/2 c. chopped onions
2 tbsp. oil
Salt
1/2 lg. green pepper (chopped)
1 tsp. curry powder
Chicken or beef (optional)

Warm oil in the saucepan. Add salt and onions and simmer for 5 minutes. Bring heat to medium and add tomatoes. Cook for another 5 minutes. Add spice, green pepper, 1 1/2 cups of water and bring to a boil. Boil for 2 minute sand add rice. Steam until water is absorbed. Let cool and serve with meat and vegetables. May add portions of meat if desired.
