BLENDER GAZPACHO SOUP 
1 or 2 cloves garlic
1/2 sm. onion, sliced
1 tbsp. olive oil
1/2 green pepper, chopped
3 ripe tomatoes, quartered
1 cucumber, peeled and sliced
1/4 tsp. salt
1/4 tsp. pepper
3 tbsp. wine vinegar
1/2 c. cold water
1/2 c. whole grain bread crumbs

Blend all ingredients. If desired, saute onions and garlic in oil before blending. Chill and serve.
