IRISH SODA BREAD 
Great for St. Patrick's day, but wonderful anytime.

5 c. flour
3 tbsp. caraway seeds
1 level tsp. baking soda
2 level tsp. baking powder
2 1/2 c. raisins (light and/or dark)
3/4 c. sugar
2 1/2 c. buttermilk
1 1/2 tsp. salt
1 egg, slightly beaten
1 stick of butter

Soak the raisins for about 1 hour -- to help expansion. Stir together flour, sugar, baking powder, salt, and baking soda. Cut in butter as for pie dough until mixture looks like corn meal. Stir in raisins and caraway seeds. Add buttermilk and egg to the dry ingredients, blending only until all of the flour is moistened. Generously butter 2 bread pans. Bake at 350 degrees for about 1 hour or until done.
