PEANUT BUTTER ROUND-UPS | |
1 cup shortening, softened 1 cup firmly packed brown sugar 3/4 cup granulated sugar 2 eggs 1 cup peanut butter 2 cups sifted all-purpose flour 1/2 tsp. salt 2 tsp. baking soda 1 (10 oz.) bag Reese's Peanut butter chips 1 cup uncooked Quaker oats (quick or old fashioned) Beat shortening and sugars together until creamy. Add eggs and peanut butter, beat well. Sift together flour, salt, and baking soda. Add to creamed mixture, mixing well. Stir in oats and peanut butter chips. Shape dough to form 1-inch balls. Place on ungreased cookie sheets. Use a handheld lemon juicer to make an imprint on the cookies. Bake in a preheated moderate (350°F) oven for 8 to 10 minutes. Makes 6 dozen. Variation: You can use chocolate chips and Reese's peanut butter chips mixed together for a really tasty peanut butter cup taste. Submitted by: Wolfe Devereaux |
