EASY BEEF STROGANOFF 
1 sm. onion, diced
3-4 oz. fresh mushrooms, diced
1 tbsp. vegetable oil
3 c. cooked beef or ground beef
1/3 c. plain lowfat yogurt
1/3 c. sour cream
1/4 c. dry white wine
1/2 tsp. salt
1/4 tsp. fresh ground black pepper
1/2 tsp. nutmeg

Saute the onions and mushrooms in oil over medium low heat until the onions are translucent. Stir in the remaining ingredients and let simmer for 10 minutes, covered, until heated through. Do not boil. 6 servings.
