PINEAPPLE PUDDING CAKE 
1 yellow Pillsbury Lovin Lites cake mix
1 sm. vanilla pudding mix, sugar free, use skim milk
Dream Whip, use skim milk

Prepare cake mix, cholesterol free directions, bake. Spread pineapple topping (see directions) over cake. Let cake and topping cool completely. Prepare pudding mix and spoon over pineapple topping. Chill cake until pudding is set.

Just before serving, prepare 2 cups (1 envelope) Dream Whip and spread it over the pudding. Garnish with just a few chopped pecans.

PINEAPPLE TOPPING:

1 (20 oz.) can unsweetened, crushed pineapple, undrained
1/2 tsp. vanilla extract
1 tbsp. cornstarch
2 tbsp. water
1 tbsp. sweetener (equivalent to 3 tsp. sugar)

Combine in small saucepan. Bring to a boil, stirring constantly over medium heat. (If Nutrasweet is used, add after cooking.) Boil for 1 minute, stirring. Spread over cake. Yield: 12 servings. Yummy!
