BRAZIL NUT CAKE 
3 c. Brazil nuts, whole
1 lb. dates, whole pitted
8 oz. maraschino cherries, drained
3/4 c. all purpose flour, sifted
3/4 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt
3 med. eggs
1 tsp. vanilla

Put nuts, dates, cherries in large bowl. Sift flour, sugar, baking soda and salt over the nut and fruit mixture. Mix well with hands until nuts and fruit are coated. Beat egg until foamy. Add vanilla. Stir into nut and fruit mixture and mix well. Bake at 300 degrees for 1 hour 45 minutes in greased and wax paper lined pan, 9 1/2 x 5 1/2 x 2 1/2 inch. Test with toothpick.

For gift cakes, double the recipe and bake in 3 (8 1/2 x 4 1/2 x 2 1/2 inch) pans.
