OLD TIME LEMON PIE | |
1 c. sugar 1 1/4 c. water 1 tbsp. butter 1/4 c. cornstarch 3 tbsp. cold water 3 egg yolks 2 tbsp. milk 6 tbsp. lemon juice 1 tsp. grated lemon peel 1 baked 8" pie shell Combine sugar, water and butter; heat until sugar dissolves. Blend cornstarch with cold water. Add to hot mixture. Cook slowly until clear. Beat egg yolks with milk and slowly stir into cornstarch mixture. Cook 2 minutes, stirring constantly. Remove from heat and add 6 tablespoons lemon juice and lemon peel. Cool and pour into cooled, baked shell. Top with meringue made with 1 teaspoon lemon juice as last addition. |
