CHICKEN WITH PLUM SAUCE 
1 sm. onion, diced
2 tbsp. oil
1 c. peeled tomatoes, chopped (fresh or canned)
1/2 tsp. salt
2 whole chicken breasts, boned, skinned & cut in half
1/3 c. Stonehill Farm plum butter
1/4 c. soy sauce
1 tsp. white vinegar
1/2 tsp. curry powder (according to taste)

Preheat oven to 350 degrees. Saute onions in oil until soft. Add tomatoes and cook 5 minutes. Place chicken breast on top, cover and put in oven for 20 minutes. Remove chicken pieces and reserve. Add remaining ingredients to the pot, stir together and cook over low flame on top of stove for 10 to 12 minutes. Cut chicken into bite sized pieces and replace in sauce. Cook briefly to reheat. Serve with plain boiled rice. May be cooked in advance and reheated.
