IMPOSSIBLE BRUNCH PIE 
1 (10 oz.) pkg. frozen, chopped broccoli (I use fresh broccoli and cook 5 minutes)
1 c. sour cream
1 c. cottage cheese
1/2 c. Bisquick baking mix
1/4 c. butter, melted
2 eggs
1 tomato, sliced thin
1/4 c. Parmesan cheese

Grease pie plate (9 inch). Spread broccoli in plate. Beat sour cream, cottage cheese, baking mix, butter, and eggs 15 seconds in blender on high speed. Pour into pie plate. Top with slices of tomato. Sprinkle with Parmesan cheese. Bake at 350 degrees about 30 minutes. Cool 5 minutes; serve.
