ARROZ CON GANDULES 
4 tbsp. vegetable oil
4 tbsp. 'Sofrito' (peppers, onions and garlic; mix with wtaer in blender)
1 tsp. salt
1 c. water
2 c. brown rice (instant Minute brand)
1 can goya green pigeon peas (Gandules)

In 3 quart saucepan saute 'sofrito' in vegetable oil. Add water, salt and bring to a boil. Add rice and 'gandules'. Cover and reduce heat to medium. Simmer for 15-25 minutes. Fluff with fork.
