TATOR - DIPPED OVEN FRIED
CHICKEN
 
1 cut up frying chicken
1 egg, slightly beaten
2 tbsp. water
1 c. mashed potato flakes
4 tbsp. butter
Salt and pepper

1. Dip chicken in mixture of egg and water. 2. Melt butter in shallow baking pan. 3. Roll chicken in dry potato flakes. 4. Place chicken skin side up. Bake 1 hour at 400 degrees. Turn chicken at the end of 30 minutes if chicken is brown.

Special idea: Tator dipped fish. Bake as you do chicken. Add lemon juice to butter. Bake fish only 25 to 30 minutes turning only once.
