ITALIAN CREAM CAKE | |
CAKE: 2 c. sugar 1 stick butter 1/2 c. Crisco 5 egg yolks & whites 2 c. flour 1 c. buttermilk & 1 tsp. baking soda 1 c. shredded coconut 1 tsp. vanilla ICING: 1 lg. pkg. cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla 1 c. chopped pecans Cream well sugar, butter and Crisco. Add vanilla, egg yolks (one at a time), flour, buttermilk with soda and coconut. Fold in beaten egg whites. Bake in 3 (9") cake pans at 350 degrees for 25 minutes. ICING: Cream together cream cheese and butter. Add vanilla, powdered sugar and nuts. Add milk if needed for consistency to spread. |
