BEEF RICE BALLS IN CHICKEN SAUCE 
1 lb. ground beef
3 tbsp. chopped onion
1/4 c. rice, uncooked
1/4 c. cracker crumbs
1/3 c. milk
1 tsp. salt
1/8 tsp. pepper
2 tbsp. fat
1 (10 1/2 oz.) can cream of chicken soup
1 c. water

Mix together beef, onion, rice, crumbs, milk, salt and pepper. Shape into 1- inch balls. Fry slowly in fat in skillet, turning occasionally to brown. Then add chicken soup and water. Cover and simmer 1 hour. You can serve over potatoes, rice or noodles.
