JAPANESE FRUIT CAKE 
1 c. Crisco
2 c. sugar
4 eggs
1 c. buttermilk
2 1/2 c. plain flour
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
1 tsp. nutmeg
1 tsp. baking soda
1 c. raisins, chopped
1 c. nuts, chopped

Bake at 350 degrees for 25 minutes. Makes three layers.

FILLING:

1 lg. pkg. coconut
4 tbsp. cornstarch
2 1/2 c. sugar
1 1/2 c. hot water
Juice of 2 lemons (1 tsp. of rind in powder)
Juice of 2 oranges (1 tsp. of rind in powder)

Cook until thick. spread over layers.
