RICE DRESSING 
1/2 c. oil
1/2 c. flour
1/3 c. finely chopped celery
1/3 c. finely chopped green pepper
1/2 c. finely chopped onion
1 c. green onion, finely chopped
1 clove garlic, pressed
2 c. hot beef or chicken broth
1 c. raw rice
1/2 c. giblets, ground (optional but makes the dish so good)
1/2 lb. ground pork, cooked (I use sausage)
1/2 tsp. salt (or none)
1/4 tsp. black pepper
1/2 tsp. cayenne pepper (optional)

Chop all veggies in food processor if you have one. In a 4-cup glass measuring cup, combine oil and flour. Microwave on 100% power 4 minutes. Stir. Microwave 1 minute. Stir. Microwave 30 seconds. Stir. Repeat until color is dark caramel, but do not burn.

Stir in veggies and microwave on high 2 1/2 minutes. Stir. Microwave 2 1/2 minutes. Stir. In a large microwaveable dish, place 2 cups hot broth. Stir in all ingredients and raw rice. Cover and microwave on HIGH for 5 minutes. Stir well. Cover. Microwave on low to medium heat until rice is tender. Let stand. Stir often.

Since microwave ovens vary in power, you may need to adjust your cooking time.
