4 1/2 lbs. lean beef, cooked and ground 6 c. cider 2 c. cider vinegar 11 c. (5 1/2 lbs.) sugar 8 1/2 pts. chopped tart apples 2 c. ground suet 4 c. seeded raisins 2 c. seedless raisins 2 c. currants 1 c. chopped citron (more is even better) 2 tbsp. cinnamon 1 tbsp. ground cloves 1 tbsp. nutmeg 1 tbsp. salt Juice and ground rind of 4 lemons, 3 oranges 1 c. molasses Mix together and pack in pint or quart jars that have been washed and scalded. Use new jar caps and clean rings. Scald caps in boiling water. Keep in the refrigerator as it is not sealed. Will keep for several months if refrigerated. Yield: 2 1/4 gallons. |
