COUNTRY CORN CASSEROLE 
1 1/4 c. slightly crushed corn flakes
1/2 c. melted butter
1 green pepper, minced
1/2 minced onion
2 tbsp. flour
1 c. milk
2 eggs, beaten
1 (16 oz.) can whole canned corn, or frozen or fresh
1/2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. sugar

Combine crumbs and butter, mix. Spread crumbs, reserving about 1/4 cup for the top over the bottom of greased casserole dish.

Saute green pepper and onion in about 2 tbsp. butter. Gradually add flour, mix well. Then add milk, cook stirring constantly, until mixture is thickened. Gradually stir in beaten eggs, corn and seasonings.

Pour into the prepared casserole dish. Sprinkle remaining crushed corn flakes over top. Bake in hot oven 400 degrees for about 25 minutes. Serves 6.
