COTTAGE POTATOES 
12 potatoes
1 bell pepper (1/2 red & 1/2 green, diced)
1 lg. onion, diced
1 slice white bread, cubed
1 c. butter, melted
1 tbsp. salt
Small amount of milk
Sprinkle parsley to taste on top with bacon, cheese

Boil and cool potatoes. Peel and dice. Add small amount of milk to moisten bread cubes. Mix all together. Put in 12 x 18 inch baking dish. Top with cheese, bacon and parsley. Bake at 350 degrees for 1 hour.
