CHICKEN CORDON BLEU 
8 chicken breasts
4 oz. thinly sliced ham
4 oz. Swiss cheese
1/4 c. melted butter
1/2 c. fine dry bread crumbs

Place deboned breasts, one at a time, between two pieces of plastic wrap. Using rolling pin or the flat side of meat mallet, flatten the breast to about 1/8 inch thick. Peel off wrap.

Sprinkle chicken with a pinch of thyme. Place a piece or two of ham in the chicken and a stick of cheese 1 1/2 inches in length. Roll up tucking in ends. Secure with a toothpick. Dip each chicken in melted butter, then roll in crumbs. Bake 40 minutes or until chicken is tender and golden brown. Serves 8.
