BERTHA'S CHRISTMAS COOKIES 
1 c. ground dates
1 3/4 dried apricots, cooked & drained (save liquid)
1/2 c. white sugar
2 tbsp. apricot liquid
3/4 c. shortening, melted
1 c. brown sugar
1 egg
1 tsp. vanilla extract
2 c. all-purpose flour
1 tsp. baking soda
2 c. quick oatmeal

Mix fruit, white sugar and liquid. Boil until mixture thickens, about 3 minutes. Cool.

Cream shortening, sugar, eggs and vanilla. Sift flour and soda. Add to egg mix. Add oats. Layer oats, then fruit, then oats in greased pan. Bake 30 minutes at 350 degrees. Cut.
