MAPLE PECAN COOKIES | |
1 c. butter 3 c. dark brown sugar 1 tsp. maple flavoring 2 eggs, well beaten 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 4 c. cake flour 1 c. chopped pecans 3 c. shredded coconut Cream butter and sugar. Add maple flavoring and the beaten eggs. Sift the soda, baking powder and salt with flour and add with chopped nuts and coconut. Form into rolls, about 2 or 2 1/2 inches in diameter and wrap in waxed paper. Chill until firm and slice a scant 1/4 inch thick. Bake at 350 degrees until edges are lightly browned. (Rolls of dough freeze good for later use.) Makes about 7 dozen cookies. |
