“CHILE CHEESE SQUARES” IS IN:

CHILE CHEESE SQUARES 
Great as a hot breakfast casserole or serve it as a cold hors d’oeuvres.

4 tbsp. (1/2 stick) unsalted butter
1/4 cup all-purpose flour
1/2 tsp. baking powder
1/4 tsp. cayenne pepper
1/4 tsp. salt
5 eggs, beaten
1 (4 oz.) can green chiles
1 cup small curd cottage cheese
8 oz. sharp cheddar cheese, shredded

Preheat oven to 400°F.

Cut butter in small chunks and melt it in a 9x9-inch baking dish in the microwave. Coat the bottom and sides of the dish with the butter. Transfer the leftover butter to a medium bowl.

Add the eggs and other wet ingredients to the butter and mix.

Mix the dry ingredients into the egg mixture.

Mix in the cheese.

Bake at 400°F for 15 minutes then REDUCE HEAT to 350°F and bake until the top is a light, golden brown (approximately 35 to 45 minutes).

Cool ten minutes before serving or refrigerate overnight for a cold hors d’oeuvre the next day.
