STUFFED SIRLOIN | |
1 (2 1/2 to 3 lbs.) sirloin (2 1/4 inch thick with pocket) 3/4 c. onion, chopped fine 2 cloves garlic, minced 3 tbsp. cooking claret 2 tbsp. soy sauce 1/4 c. butter 2 1/3 oz. canned mushrooms, drained Slash fat edge of steak. Do not cut into meat. Slitting from fat side, cut pocket in each side of lean, cutting almost to bone. Combine onion, garlic with a dash of salt and pepper and celery salt. Fill pockets with mixture. Mix claret and soy sauce and brush on steak. Grill over hot coals a total of 25 minutes or until done. Turn once, brush occasionally with soy sauce. Heat butter and mushrooms, may pour over steak or serve on the side. Slice meat across the grain. Serves 4 to 6 people. |
