FRESH APPLE CAKE 
3 eggs
2 c. sugar
3 c. flour
1 c. nuts, chopped
1 1/2 c. cooking oil
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 c. raw apple, peeled and cut, McIntosh is best

Cream eggs, sugar and salt. Add oil and beat well until light and fluffy. Blend in vanilla and 2 cups flour and cinnamon. Add apples and nuts and blend thoroughly.

Add 3 cups flour and baking soda. Bake at 350 degrees. Bake in greased and floured tube pan at least 1 hour and 20 minutes. Test if cake is done, if not bake a little longer.
