JALAPENO CORN BREAD 
3 c. corn meal mix
2 1/2 c. milk
3 eggs, beaten
1 c. corn, whole kernel
8 sm. jalapenos peppers, chopped (fewer, if desired)
2 1/2 c. yellow sharp cheese
1 lg. onion, grated
1/2 c. oil

Put mix in bowl. Add milk and eggs. Then add corn, pepper, cheese and onion. Heat oil and add to mixture. Stir well. Pour into heated pan or skillet. Bake for 45 minutes at 375 degrees. (Can easily be frozen.)
