FRUITED CHICKEN SALAD 
3 tbsp. oil
1 tbsp. vinegar
1 tbsp. orange juice
1/2 tsp. salt
2 1/2 c. cooked & cubed chicken or turkey
1 1/2 c. cooked rice (1/2 c. raw rice)
3/4 c. diced celery
3/4 c. seedless green grapes
1 (11 oz.) can mandarin oranges, drained
1 (8 oz.) can pineapple chunks, drained
3/4 c. Miracle Whip or mayonnaise
1 cantaloupe, cubed

This may be cut into rings and salad served in the center of the ring.

Combine oil, vinegar, orange juice and salt; blend well. Add chicken or turkey and stir to coat. In a large bowl, combine and blend all ingredients. Add chicken. Stir in toasted almonds when serving. Serves 6 to 8.
