STRAWBERRY BREAD 
3 c. mashed strawberries
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1 1/4 c. oil
4 eggs, well beaten

Drain 1/2 cup strawberry juice from mashed strawberries and save for topping. Mix all dry ingredients together. Make a hole in center of mixture. Add strawberries, remaining juice, oil, and eggs. Mix by hand until thoroughly combined. Pour into 2 greased 9 x 5 inch loaf pans. Bake at 350 degrees for 50-60 minutes. Cool thoroughly on wire rack.

TOPPING:

Mix 8 ounce softened package cream cheese with reserved strawberry juice. Blend until smooth. Drizzle over top of cool bread.

You may substitute 3 well mashed bananas (very ripe) for strawberries, add chocolate chips (optional) and top with powdered sugar instead of cream cheese for banana bread.
